Carrot Cake Eye Balls

This human anatomy recipe is a cinch and perfect for the Halloween party Mr. (S)Murphy and I attended. They are cake balls, a great little idea inspired by the cake pop craze of this lady.

A super easy recipe, the only thing hard about them is to find time to do it!
What you need:
1 Box cake mix (I used carrot cake for these)
1 can frosting (pick something that goes well with your cake choice)
2 bags of dipping chocolate of dipping candy
decorative frosting

Instructions:
Bake the cake as directed on the box (I chose to do this the night before) and allow the cake to cool completely.
Once the cake is cooled, crumble it up in a large bowl, add the frosting and mix together thoroughly. Either use a spoon or your hands and make balls out of the mixture placing them on a wax paper covered cookie sheet. Place in the freezer until the balls are firm enough for dipping. Melt the chocolate as directed on the packaging and then dip each ball in covering completely. After the chocolate hardens decorate to your little hearts content.

So easy and so fun! My sister has made these for things like weddings and on the bakerilla website you can see all the way cute and creative things she's done with her awesome cake pop idea. Enjoy!
